Objectives:

  • Synergize with the Commercial team to create, maintain consistency, update when needed an exceptional journey for customers to explore THE POND experience at our location in Seminyak through the beverage aspect.
  • To build, lead and develop top Bar team to prevail on teamwork, innovation, consistency.

Responsibilities:

Menu (50%)

  • Develop and propose new menu, including creating and maintaining standard drink recipe
  • Improve or modify existing menu
  • Provide direction and control on drink preparation, in making and mixology process
  • Control drink quality before serving
  • Monitoring and controlling ingredient to ensure consistency & quality
  • Review the vendors for ingredients and/or bar equipment purchase
  • Responsible for ordering and purchasing ingredient, including receiving ingredient to ensure quality is met
  • Responsible for cost and inventory control, and also conduct weekly and monthly inventory
  • Control waste management
  • Collaborate with Head Chef and Sales & Marketing team in term of promotions

Bar Operation (20%)

  • Maintain Bar equipment to avoid breakage or broken equipment
  • Schedule Bar equipment maintenance
  • Arrange equipment purchase or repair
  • Maintain cleanliness standard in all Bar area

Team Management and Development (30%)

  • Develop top service team, including hiring and training new team member, and assess team member who require further training
  • Provide performance appraisal and provide recommendation regarding staff evaluation, hiring, promoting, disciplinary action or dismissal of employee within the area of work
  • Lead the team for drink consistency
  • Setting and training sanitary and safety standards
  • Crate and manage roaster/schedule
  • Handling team conflicts or issues
  • Maintain strong interaction with day to day performance of the restaurant and be accessible to both staff and management

Professional Requirements

  • 2-4 years strong Head Bar experience
  • Experience in drink MIXOLOGY, including traditional drinks. Knowledge in wine and beer are a must
  • Experience in Spices for beverages
  • Hands-on experience on developing team members and leading by example
  • Ability to work with a variety of different cultures with inputs from internal
  • Excellent organizational skills and detail orientation.
